The menu is a collaboration between Stevens and Executive Chef Jason Stude. “The open-air patio offers a one-of-a-kind panorama of downtown Austin and Lady Bird Lake, so guests can take in all the beauty while enjoying delicious bites and drinks from the new Deck Nine menu,” says Jason Stevens, director of bars and beverages at La Corsha Hospitality Group. It’s an urban oasis in the center of the city’s lively downtown. Set within Austin’s historic Seaholm district on the top floor of the Boiler Nine Bar + Grill, the Deck Nine Observatory Bar blends a modern industrial feel with gorgeous cedar and greenery. Draft beer and cocktails round out the menu. Wine offerings include Veuve Clicquot Rosé and Laurent-Perrier Brut, as well as pours from labels such as Cakebread Cellars and Ramey Wine Cellars. “We know that it’s always fun to share meals and drinks with friends and family,” Vellante says. Multiple types of sangria, including special seasonal options, are also available by pitcher or glass. Sushi is a favorite on the rooftop as well as pitchers of cocktails. The atmosphere is the perfect place for socializing and sharing, and the food and drinks follow suit. … And sunsets over the harbor are very picturesque.” “The ferries are taking passengers to Cape Cod, cruise ships are entertaining passengers on dinner excursions and there are lots of pleasure boats. “You can see various boats and vessels going by,” says Richard Vellante, executive chef for Legal Sea Foods. The bar’s Cold Brew Coffee Swizzle, a tropical rum and coconut drink made with cold brew coffee, is just one example of that. The Skylark’s cocktail menu reflects the latest trends and techniques in mixology. “It was inspired by the feeling of being really part of the blue skies of New York City as you take in the unobstructed views,” Rabin says.

The blue-hued martini reflects the city’s cloudless sky, blending Beefeater Gin, Ketel One Vodka, St-Germain liqueur, Blue Curacao and fresh lemon juice, garnished with a bright red brandied cherry. No wonder The Skylark’s signature cocktail, which bears the same name, was inspired by the view. “There is always a nice blend of local New Yorkers, businesspeople coming in after work, and ‘in the know’ tourists visiting the rooftop to enjoy a drink with friends and enjoy beautiful weather,” Rabin says. “Not many venues can say they offer such an inclusive snapshot of the city at one time,” says David Rabin, principal of The Skylark.ĭuring warmer months, the rooftop is buzzing with activity.
